Since I'm a mum, I discovered the convenience of preparing different low carb casseroles. You can freeze it and reheat it, or reheat it in the microwave, and you have a delicious low carb healthy family meal any time.
Keto casserole with cauliflower and ground beef
This keto casserole is with ground beef, cauliflower and of course, there is a cheese. Here is a combination of cheddar and feta, and in this combination, these two cheeses work perfectly. I have to admit that I wasn't thinking too much how to combine cheeses here, the thing is that I just had feta and cheddar in my fridge. Both cheeses were at the end so I just had to make something out of it. And the result was this really delicious keto casserole with cheese and cauliflower rice.
Cauliflower rice is surrounded with meat and delicious cheese, it's giving the lightness to this keto casserole. Of course, cauliflower and cheese are main ingredients in keto cooking, as well as in this recipe.
Keto breakfast casserole
When you prepare keto casserole with cauliflower rice on this way you have a great dish for the whole family. We had this keto casserole for dinner and reheat it the day after and serve it as a keto breakfast casserole! The best revelation for me was when I realized that I can serve last night dinner as a breakfast! Why not? It saves you time and you know that you have a great start of your day.
Baby led weaning casserole
Probably your children will like this casserole too. My younger child is a toddler, she was eating this low carb casserole with her hands and asking for more! I won't share her picture here because she had the samples of this casserole everywhere, on her clothing, face and in her hair! 😀
But, I am a relaxed person, we just changed the clothes and go on. I like when my children enjoy healthy food, even in their hair. Eating should be nourishing activity on every way, and for children there is nothing more nourishing for their brain, than play! So, if you have a toddler or a baby, this food is great for baby led weaning. You will be busy cleaning but I tell you, it's worth it! 🥰
Ingredients
Olive oil or butter or ghee 2 TBS
Ground beef 500 g/17.64 oz
Onion 70 g/2.47 oz
Cauliflower 600 g/21.16 oz
Feta cheese 150 g/5.29 oz
Cheddar cheese grated 200 g/7.05 oz (half is for the top)
Crashed tomatoes 200 g/ 7.05 oz
1 L egg 🥚
Salt to taste
Pepper to taste
Dried basil 1 tsp
Garlic powder or spring garlic to your taste
How to prepare low carb casserole with cauliflower and ground beef
Prepare cauliflower rice or use already prepared if you have. I like to grate fresh cauliflower whenever possible.
Microwave the cauliflower 4 minutes and drain the excess water from the cauliflower. If you don't use the microwave you can steam the cauliflower and drain the water from the cauliflower.
Chop the onion and throw it on a hot olive oil, butter or ghee and stir. After onion is softened and start to get golden brown color, add ground beef. Stir it well until meat start to get the brown color and water from meat is gone. It's important to have this meat mixture as dry as possible because you don't want your casserole to be full of water and runny.
With eggs is better!
When the meat mixture is dry enough and golden brown, add cauliflower and repeat the stirring until the water from cauliflower evaporates.
When you are satisfied with the mixture, add crushed tomatoes, stir, add feta cheese and half of prepared grated cheddar.
Definitely add 1 large egg because egg will give great taste and together with cheese will bring the mixture together.
When all nicely combined, add salt, pepper, powdered garlic, basil and stir well. Put the mixture it into your lasagna dish or similar deep dish and put remaining grated cheddar on top.
Bake keto casserole for 10 - 20 minutes on 180 C (356 F) or until it's baked and until you see nice golden crust of cheese on top.

I've just made this. Before putting it into the pot to oven cook I had a taste. So very bland following the recipe, to my taste. I added in worcestershire sauce, hot sauce, more s&p, more garlic. It looks like baby food as I put it in the oven dish, hoping it will improve with baking though.
