Walnuts cake bars with chocolate – keto gluten free

Full of taste walnuts cake bars with chocolate – keto gluten free delicious recipe. Roasted walnuts with dark chocolate and a splash of coffee.

Do you like walnuts and chocolate? Fantastic combination if you ask me! Here I have roasted walnuts from my family orchard paired with a good quality dark chocolate, cocoa, and a splash of coffee. This afternoon I  couldn’t think about better way to relax than sitting in my garden with a cup of coffee or tea and this delicious keto dessert.

Walnuts on keto

Walnuts are healthy, low carb nuts, full of healthy fats. I like them roasted, and in this recipe I use roasted walnuts too. Just be careful when roasting walnuts to avoid burning because walnut doesn’t need a lot to start to burn. Few minutes in the oven or in a pan on the stove is more than enough.

Ingredients for cake with walnuts recipe

Ground roasted walnuts 3 cups (345 g/12.17 oz)

Melted and cooled butter 1/2 cup (125 g/4.40 oz)

Extra dark cocoa powder 2 TBS (14 g/0.5 oz)

Sweetener (Swerve, Sukrin or combination of Erythritol and stevia) 1.5 cup

Baking powder 1 tsp

Pinch of salt

2 eggs

Espresso or strong Turkish coffee filtered 2 TBS

Rum flavoring 1 tsp

Dark chocolate chopped or dark chocolate chips 100 g/3.52 oz)

How to make it?

Mix ground walnuts with cocoa powder, sweetener, baking powder and a pinch of salt.

Add cooled melted butter, mix it and add eggs, espresso and rum flavoring. If you don’t have rum flavoring you can use vanilla but it’s definitely not the same! Rum flavoring is perfect for walnuts.

Whisk the mixture and when all nicely combined add chopped dark chocolate or chocolate chips.

Bake on 175 C (350 F) for 20 – 30 minutes.

This walnuts cake recipe is so easy. Literally you don’t need any special baking skills, just start to mix all ingredients together! This walnut cake is really walnuty and if you are a true walnut lover you will really like this cake.

It looks like this cake is a cake for adults with all those walnuts, dark chocolate and coffee. Coffee time is the only time in a day I can dedicate to myself to reflect on myself and rest a little bit, especially in the morning. Or during the weekend in the afternoon when my children are having their afternoon nap.
