New Year is coming and I am sure that you need some nice dessert recipe for your New Year's dinner. Maybe this raspberry cake?🎂🎄
As you could see in my previous posts, my 3,5 years old son is "helping" me to bake, and my whole family is tasting my recipes. I made this cake on a Saturday morning together with some muffins. We ate muffins and few hours later I brought this cake. Omg 😲 it was gone immediately. I just had time for few photo shots and cake was gone!
My husband told me that this was his favorite cake. And my son was asking for more. If you like raspberries and very moist cakes - you will like it too. When I say moist - I mean very moist and juicy because cake bottom is just melting in your mouth. 😋
Ingredients for Family On Keto Moist Raspberry Cake
Bottom layer of Family On Keto Raspberry Cake
Butter 100 g
Sweetener ½ cup
2 eggs
Baking powder 2 tsp
Vanilla extract 1 tsp
Cinnamon 1 tsp
Coconut flour 3,5 TBS
Almond milk 200 ml
Raspberry sauce Ingredients
Frozen raspberries 2 cups
Sweetener ½ cup
Cream layer
Sour cream 1 cup
Mascarpone 1 cup
Sweetener 2 TBS
Raspberry sauce - half of the mixture
Procedure
Bottom layer
Mix softened butter, sweetener and eggs together.
Add dry ingredients and mix altogether well.
Add vanilla, cinnamon and almond milk and mix. Mixture should looks like this.⬇️
Put the mixture in the baking pan.
Bake the mixture 10 - 15 minutes on 180°C or 350°F with vent.
Procedure to make raspberry sauce
Blend raspberries in a blender or with a hand blender.
Mix raspberries and sweetener on a low heat.
Put gelatin sheets in the water.
Stir gelatin sheets when became moist or prepare it according to manufacturer recommendations. Here is a video guide on how to prepare gelatin sheets if this is new for you. ⬇️
When mixture start to boil put prepared (like on video) gelatin sheets in the sauce and mix until gelatin melted.
Pour half of the sauce on baked cake bottom.
Another half of sauce leave for the cream layer.
Cream layer
Mix sour cream, mascarpone and sweetener.
Ad half of the raspberry sauce.
Mix until the mixture equally colored.
Put the cream mixture on the top of the cake.
Leave it for few hours in the fridge.

- Frozen raspberries 2 cups
- Sweetener ½ cup
- Gelatin 4 sheets
- Cream layer
- Sour cream 1 cup
- Mascarpone 1 cup
- Sweetener 2 TBS
- Raspberry sauce ½ half
Instructions
Bottom layer
- Mix softened butter, sweetener and eggs together.
- Add dry ingredients and mix altogether well.
- Add vanilla, cinnamon and almond milk and mix.

This recipe was absolutely deliscious! I made it for a dinner party where 1/3 of the people are eating keto, and it was loved everyone! The raspberry topping is creamy and just the right amount of sweet. I don't have access to gelatin sheets, so I used one small packet of knox gelatin, and it worked beautifully. I will definitely be making it again!

Have you ever made this with regular gelatin? I can't get sheet/leaf gelatin locally and want to try this for tomorrow.

Hi Liz, haven't made this cake with regular gelatin but it should work with regular too. Just use regular gelatin according to instructions on the packaging. Be sure to put enough (and not too much😊 also because it's better if cream layer stays firm but fluffy and not like jelly. 🙂
