This morning I feel like I don’t want to go out or do anything. I am extremely lazy. Outside is foggy and cold. So, I had to make something sweet for my family. I decided to make some low carb red currant muffins for breakfast. I was thinking that my toddler would enjoy it. And I was right! This muffins were great so I just had minute or two to take few photos and they were gone in a second. While I was taking photos my husband made us some nice Earl gray tea. And we add some color to this foggy day with this yummy muffins.
I was using what I had in my kitchen. As I already mentioned, we have our walnut trees but we have also some berry bushes of red and black currant, blackberries, gooseberries and similar. In this muffins I put some chopped walnuts and frozen red currants I had in my freezer. Combination is a total win!
For this recipe I was inspired with recipe from All day I Dream About Food. As I said, I was lazy, so I didn’t want to make mistake and throw away anything. Also, I didn’t want to make something that I already tried. That’s why I took one of her recipes (until now I made few and they were always good) and put my own signature in it. Thank you Carolyn! 🙂
