This morning I feel like I don't want to go out or do anything. I am extremely lazy. Outside is foggy and cold. So, I had to make something sweet for my family. I decided to make some low carb red currant muffins for breakfast. I was thinking that my toddler would enjoy it. And I was right! This muffins were great so I just had minute or two to take few photos and they were gone in a second. While I was taking photos my husband made us some nice Earl gray tea. And we add some color to this foggy day with this yummy muffins.
I was using what I had in my kitchen. As I already mentioned, we have our walnut trees but we have also some berry bushes of red and black currant, blackberries, gooseberries and similar. In this muffins I put some chopped walnuts and frozen red currants I had in my freezer. Combination is a total win!
For this recipe I was inspired with recipe from All day I Dream About Food. As I said, I was lazy, so I didn't want to make mistake and throw away anything. Also, I didn't want to make something that I already tried. That's why I took one of her recipes (until now I made few and they were always good) and put my own signature in it. Thank you Carolyn! 🙂
To get 9 low carb red currant muffins you will need next ingredients
Almond flour 1 ½ cup
2 M eggs
Sweetener ½ cup
Red currant ½ cup
Cinnamon ½ TBS
Greek yogurt ½ cup
Baking powder 1 tsp
Chopped walnuts ½ cup
Vanilla extract ½ tsp
Procedure
Mix eggs, Greek yogurt, sweetener, cinnamon, vanilla, and baking powder.
Add chopped walnuts and red currants.
Add almond flour.
Mixture should looks like this. So you can add more almond flour or more Greek yogurt if needed.
Distribute the mixture in muffin cups.
Bake it for 15 minutes in preheated oven (180°C or 350°F).
Let it cool and enjoy! 😋💕
