Salad with roasted pepper and feta cheese is easy, full of vitamins, vegetarian keto friendly and highly nutritious meal.
When spring comes, my salad cravings are on, like my body needs extra greens. I try to listen to my body so I am creating different keto salads every day. This low carb salad is keto vegetarian friendly, of course for keto vegetarians eating eggs and cheese, because this salad is loaded with eggs and Greek feta cheese.
Can vegetarians eat keto?
Question about eating keto vegetarian I get very often from my vegetarian friends and in the groups where I am active. I believe keto vegetarian is not a problem at all. Anyway, keto is full of veggies, leafy green goodies, coconut and olive oil, avocado, nuts, and if you eat eggs and cheese, you can do it really easy. This is one of the low carb recipes, great for keto vegetarian diet, and could be eaten as keto vegetarian breakfast, lunch or dinner, or even as a keto vegetarian side dish.
Ingredients for salad with roasted pepper and feta cheese
Lamb's lettuce 🥬 1 cup
Rocket salad 1 cup
Fresh red paprika cut in pieces
Avocado ½ of big avocado or 1 small avocado
Feta goat cheese ¼ cup (50 g)
2 M boiled eggs
Lard 1 TBS for pepper roasting
Ingredients for dressing
1 TBS apple/cider vinegar
Olive oil 1 TBS
Sea salt and pepper
How to prepare keto salad with roasted peppers and feta cheese?
Boil 2 eggs to your taste. Don't overcook it to avoid oxidation of egg yolks.
Melt lard on a pan and roast pepper until become soft and get nice roasted smell.
Put some salt on roasted pepper.
Mix the rocket and lamb's lettuce salad, wash it, dry it and put some dressing on it.
Place salad mix on a plate or in a salad bowl and add roasted pepper cut in pieces of bite size, put bite size cut eggs, avocado, feta cheese and pour some olive oil on top, sea salt to your taste (if needed, be careful because feta is salty), and freshly ground pepper.
Serve this salad as a complete meal, starter of a side dish.
