I was thinking how to make a healthier version of this popular dessert for my keto kids but to keep the texture and the taste. So, I started to experiment with raw cacao and beef gelatin. The result was delicious!

Ingredients for keto chocolate pudding without eggs
Raw cacao 2 TBS
Gelatin powder 1 TBS
Xylitol 4 -5 TBS or honey for paleo version
Peanut butter unsweetened or almond butter 2 TBS
Coconut oil 2 TBS
Warm water 1 cup
Heavy whipping cream or canned coconut full fat milk from for paleo 1 cup
Vanilla essence 1 tsp
Cinnamon 1 tsp
If doing paleo you can add ½ or 1 banana
Extra heavy whipped cream
How to make keto chocolate pudding without eggs?
Put all dry ingredients in a blender or in a cup for mixing with an immersion blender.
Add hot water, coconut oil and peanut butter.
Mix all together.
Add heavy whipping cream or full fat coconut milk, and vanilla essence and mix until well combined.
It will be liquid, don't worry it has to be like that. When cooled it will take the form of a pudding.
Leave it for few hours in the fridge to take the form of a pudding.
Serve it with some whipped heavy cream (optional).
