When I was a child we used to eat chocolate pudding very often. There was not so many sweets in the stores so my mum used to make an instant chocolate pudding for dessert or as a breakfast. A lot of cakes she used to make with instant pudding, and pudding in general was very popular at that time. I was thinking how to make a healthier version of this popular dessert for my keto kids but to keep the texture and the taste. So, I started to experiment with raw cacao and beef gelatin. The result was delicious!
Few more pluses to this dessert are that this keto pudding is without eggs, so it is OK if you avoid eggs or you have an allergy, it's gluten free, and it's easy to make like the instant one, maybe even easier because keto chocolate pudding you don't need to cook. Ingredients for keto chocolate pudding without eggs
Raw cacao 2 TBS
Gelatin powder 1 TBS
Xylitol 4 -5 TBS or honey for paleo version
Peanut butter unsweetened or almond butter 2 TBS
Coconut oil 2 TBS
Warm water 1 cup
Heavy whipping cream or canned coconut full fat milk from for paleo 1 cup
Vanilla essence 1 tsp
Cinnamon 1 tsp
If doing paleo you can add ½ or 1 banana
Extra heavy whipped cream
How to make keto chocolate pudding without eggs?
Put all dry ingredients in a blender or in a cup for mixing with an immersion blender.
Add hot water, coconut oil and peanut butter.
Mix all together.
Add heavy whipping cream or full fat coconut milk, and vanilla essence and mix until well combined.
It will be liquid, don't worry it has to be like that. When cooled it will take the form of a pudding.
Leave it for few hours in the fridge to take the form of a pudding.
Serve it with some whipped heavy cream (optional).
