Cauliflower is a queen of every low carb or keto kitchen. Whenever thinking about healthy keto side dish, first though is a cauliflower. However, on my blog Family on Keto you can find my cauliflower mash with eggs, cauliflower recipe that I like so much because it's so easy and tasty, great for quick family meals after work. Sometimes when I have more time, like today because it's Sunday, I make keto cauliflower gnocchi. Cauliflower gnocchi are great keto side dish to any sauce. I like to cook meat, prepare the meat sauce and pour over the gnocchi. That's perfect keto family meal, easy to make.
Ingredients for Keto Cauliflower Gnocchi Recipe
1 cauliflower (500 g) only florets
Butter 2 TBS
Parmigiano or Grana Padano grated cheese ¾ cup (100 g)
Almond flour or almond meal 2 TBS
2 M eggs
Pinch of salt
Pepper to taste
Garlic powder
How to prepare Keto Cauliflower Gnocchi Recipe?
In a boiling water add a pinch of salt and cauliflower florets.
Cook cauliflower until soft.
Drain the cauliflower well and add the butter.
Mix it with an immersion blender and leve it to completely cool.
When cauliflower cooled, add eggs, almond flour, parmigiano, salt, pepper, garlic and other herbs to your taste.
Mix everything with the fork and form gnocchi with the spoon.
Place gnocchi on a parchment paper.
Bake for 15 minutes on 200C (390F) in a preheated oven with the vent. Be careful because the length of baking depends on your oven, it may need less or more to properly bake. When baked, keto cauliflower gnocchi should look like this.
Serve keto cauliflower gnocchi as a snack or with some keto sauce of your choice. 😋😁

Made these and they’re fantastic... my next try will be with cheddar cheese instead of Grana padano. Have you try to make it with different cheese?
