Keto Chunky Monkey Energy Balls
Keto, gluten-free Chunky Monkey Energy Balls. Delicious protein rich energy balls with peanut butter, whey protein, walnuts and chocolate chunks.
Ingredients
- Low-carb vanilla whey protein ¼ cup/25 g/0.88 oz
- Low-carb sweetener of your choice to your taste (I was using erythritol 2 TBS)
- Chopped walnuts ½ cup/60 g/2.11 oz
- Dark chocolate chunks 46 g/1.62 oz
- Softened unsweetened peanut butter ½ cup/114 g/4 oz
- Heavy whipping cream 2 - 4 TBS
Instructions
Prepare softened peanut butter (leave it on a room temperature or microwave for 30 sec in the microvave, or make it soft in another creative way :)).
Combine all ingredients in a bowl.
Make 12 energy balls with your hands.
Leave it in the fridge, at least 15 minutes if you can wait.
Serve & enjoy!
