Ingredients for easy low-carb focaccia donuts
- 1 cup shredded mozzarella
- 1 cup almond flour
- ½ tablespoon baking powder
- Pinch of salt
- 1 tablespoon olive oil
- 1 large egg
Topping ingredients
- Cherry tomato cut into small parts
- Olives black and green cut into small pieces
- Parmesan cheese 1 pinch
- Olive oil 1 TBS
Instructions
- Preheat your oven to 180°C (350°F).
- In a microwave-safe bowl, combine the shredded mozzarella, almond flour, baking powder, salt, and olive oil. Mix well.
- Microwave the mixture for 45 seconds until the mozzarella is melted and pliable.
- Carefully remove the bowl from the microwave and stir the mixture to incorporate all the ingredients evenly. If needed, microwave the mix once more.
- Add the egg to the mixture and knead the dough until it becomes smooth and well combined.
- Divide the dough into 6 equal parts and shape each into a donut shape.
- Place the donuts in the prepared silicone mold, add topping, and sprinkle with parmesan cheese and olive oil.
- Bake donuts in the preheated oven for approximately 20 minutes or until they turn golden brown.
