Keto Mediterranean Orange Ricotta Cake With Olive Oil is an easy keto ricotta cake made from ricotta cheese and almond flour with a subtile touch of extra virgin olive oil. This gluten-free flourless cake is delicious dessert or a nourishing breakfast.
Last weekend I was home alone with my little children. We decided to make some cake 🎂 together. Idea was to make a cake that goes great with a cup of coffee ☕ or tea. We had at home standard ingredients like almond and coconut flour, eggs, and there was ricotta cheese and oranges 🍊. So I wanted to use that cheese and orange zest. I mixed those ingredients and something incredibly tasty came out! Delicious keto ricotta cake! When wanted to take a few photos my children just didn't let me do it. They wanted to eat that cake immediately. And they were so satisfied! Cake was gone the same day. And it went great with coffee and black tea.
Ingredients
1 cup almond flour
¼ cup coconut flour
1 teaspoon baking powder
1 pinch of salt
1 cup Swerve sweetener or ½ cup erythritol and 10 drops of liquid stevia
Orange 🍊 zest
1 TBS vanilla essence
3 large eggs
¼ cup of extra virgin olive oil
1 cup ricotta cheese (250 g)
For the cream layer
1 cup heavy whipping cream
1 cup mascarpone cheese
¼ cup of swerve sweetener
1 TBS vanilla essence
Strawberries 🍓 or other berries to garnish 🍓
Procedure
Mix all dry ingredients.
Add remaining ingredients and mix until smooth.
Bake on 175 C (345 F) for 30 minutes or until baked.
Check with the wooden stick if it's baked.
Prepare the cream for keto ricotta cake on this way
Mix mascarpone, heavy whipping cream, sweetener and vanilla essence.
Put the cream on top.🎂
Garnish with strawberries. 🍓🍓🍓
