Last couple of months my life is so hectic - job, children, husband, family, trying to find a new 🏡 house... Somehow I can't find the time to write my blog posts. I have created so many delicious recipes but no time to share it with the world!
Last night I came late from a business trip in Prague and today I found a little time, since children are sleeping to write and maybe publish one recipe from the last week.
Strawberry 🍓 season began and last weekend I bought a huuuuge amount of strawberries. Of course, we couldn't eat them all so I decided to make fluffy sugar free dessert from remaining strawberries. Oh my gosh! Sugar free pavlova was delicious! So I decided to share this sugar free pavlova recipe with you! 🍓🍓🍓🍓
Ingredients for Keto Strawberry Pavlova Roll Cake
Sugar free Pavlova Cake Roll
6 egg whites
1 cup of sweetener (you can use powdered Swerve sweetener or combination of powdered erythritol and stevia or powdered xylitol). Don't use only erythritol because you will get a strong cooling effect.
1 TBS cider vinegar
1 pinch of salt
Cream Filling
Heavy whipping cream 2 cups (500 ml)
Mascarpone cheese 1 cup (250 g)
½ cup Swerve sweetener
1 TBS vanilla essence
300 g strawberries 🍓 🍓🍓
How to make sugar free pavlova crust?
Beat egg whites with sweetener, pinch of salt and cider vinegar until peaks formed.
Distribute mixture on baking paper. Mixture on the paper should be 4 - 5 cm (1.5 - 2 inch) high.
Bake on 165 C or 325 F for 20 minutes or until golden brown. Don't over bake because it will crack and you will not be able to roll it. It has to be golden brown on the surface and still soft, should't be hard to touch.
Easy and yummy cream filling for sugar free pavlova
Make the cream filling - beat in a mixer mascarpone cheese, heavy cream, Swerve sweetener and vanilla essence.
Put half of the cream on baked and cooled crust. Don't put it on a hot crust because the cream will become runny.
Put strawberries 🍓 on top and roll the cake.
For the proper rolling it's the best to use the kitchen towel.
Remaining cream put on top of the rolled sugar free pavlova cake.
Cool it for at lest 15 minutes in the fridge.

Dali se moze umjesto swerve eritriol koristiti i dal obavezno mora biti u prahu?

Može eritritol, ali predlažem radije kombinaciju eritritola i stevije. Stevija ublaži efekt hladjenja koji eritritol ostavlja. Ne mora biti u prahu, ali prah je ljepši jer nema “hrskanja” pod zubima 🙂
