It's zucchini season here. We have a tons of zucchini and every day I try to think what to prepare out of them. Today's breakfast was a real discovery for my family.
This type of zucchini fritters I bake in the oven, and you can easily do the same! Just grate them, mix with other ingredients and put it in the oven. In 15 minutes you have a really yummy breakfast! Of course, you can fry them on a pan, but this is so much easier and faster.
I am not a huge fan of zucchini, their watery structure is not so attractive to me, but this keto zucchini breakfast I could eat every day. I think that the reason is related to my secret ingredient! That's pumpkin seeds flour. That's basically ground pumpkin seed, and it goes so good with zucchini, they are perfect match!
Are pumpkin seeds keto?
If you still haven't tried ground pumpkin seeds or pumpkin seed flour, you just have to try! This recipe is great occasion. Pumpkin seeds are really nutritious and taste is incredible. In this recipe I put 2 TBS of pumpkin seeds flour, and it gives so much of flavor, and don't contribute so much with carbs as with nutrients. They are packed with magnesium, copper, iron and vitamin K.
Pumpkin seeds flour
Pumpkin seeds flour is really nice flour for low carb baking, you can put it in all low carb baked goods like low carb breads, cakes and pastries. Because of special flavor it will give really interesting "whole grains" flavor. Like from the artisan bakery.
Ingredients for low carb oven baked zucchini fritters
Grated zucchini 250 g/8.81 oz
Mozzarela cheese 5o g/1.76 oz
Almond flour ¼ cup/25 g/0.88 oz
Pumpkin seed flour 2 TBS/20 g/0.70 0z
Pinch of salt
Pinch of freshly ground pepper
Baking powder ¼ tsp
2 L eggs
How to make it?
Preheat oven to 180C (356F).
Grate zucchini and squeeze out excess water.
In a large bowl mix all dry ingredients together (almond flour, pumpkin seeds flour, pinch of salt, pepper, baking powder.
Combine grated zucchini with dry ingredients and eggs.
Pour the mixture in the baking tray covered with parchment paper.
Bake 10 - 15 minutes or until it's baked.
Serve with sour cream, yogurt, greek yogurt or anything you like!

I copied the zucchini fritter recipe and then realized it said in directions to add eggs---there are no eggs listed in the ingredients. How many eggs?....it pays to proof read the recipe before you send it out there!
