- Pork Butt (Shoulder): 900 g (2 lbs), skinless and boneless
- Lard 1 TBS
- Meat Rub Spices:
- Salt: 1.5 tsp
- Pepper: 0.5 tsp
- Paprika: 2 tsp
- Garlic Powder: 0.5 tsp
- Dried Oregano: 0.5 Tbsp
- Cumin Powder: 0.5 tablespoon (or Curry Powder as a replacement)
- For Pulled Pork Sauce:
- Tomato Paste: 1 tsp
- Onion: 100 g (3.5 oz), chopped
- Garlic: 3 cloves
- Broth or Water: 1.5 cups (350 ml)
Step-by-Step Guide
Preparing the Pork:
- Prepare the Meat: Cut the pork butt into 4-6 chunks. Mix together all the meat rub spices and thoroughly coat each piece of pork.
- Brown the Pork: Set your Instant Pot to 'Sauté'. Add 1 tablespoon of lard and sear the meat on all sides until browned. Remove the meat and set aside.
- Cook the Aromatics: In the same pot, add the chopped onion and garlic to the remaining lard. Sauté until caramelized. If the onion sticks, add a few tablespoons of broth or water.
Pressure Cooking:
- Combine and Cook: When the onion is caramelized, add the broth and tomato paste to the pot, then return the meat to the pot. Seal the lid and set the Instant Pot to 'Pressure Cook' for 45 minutes.
- Release and Shred: Once cooked, release the pressure according to your Instant Pot's instructions. Remove the pork and shred it using two forks.
