I do this procedure with beef and chicken meat for my stir fries and wok dishes, and of course with pork chops before making anything out of them. I like to cook with pork chops, it's cheap and really versatile meat that you can use in so many recipes. Only problem is that it's very lean so it becomes dry and chewy after baking in the oven or on a pan. But when you tenderize it, it stays juicy and it doesn't become chewy. When you buy a beef cut and want to make a meal in the wok, just tenderize it with a little bit of baking soda, and here is how!
Ingredients you need to tenderize meat
½ teaspoon of baking soda for every 250 g/ 9 oz of beef or pork chops
Bowl with water
Procedure to tenderize meat with baking soda
Place the meat cuts in a large bowl.
Sprinkle the meat with a baking soda and leave it for at least 15 minutes covered on a cold place or in the fridge.
After 15 - 30 minutes put the meat in in a bowl and cover it with water. Wash the meat and rinse it well with a lot of water. There shouldn't be any baking soda left on the meat.
After rinsing remove the excess water with a paper towel and continue with your recipe.
After tenderizing process meat will be tender and will have wonderful bright color.
