Ingredients for delicious low carb zucchinella!
You'll need the following ingredients:
- 1 zucchini, sliced
- Medium onion, thinly sliced
- Large egg
- Salt and pepper to taste & 1 teaspoon of paprika
- Almond Flour: ⅔ cup of almond flour
- Coconut Flour: 1 tablespoon of coconut flour
- Mineral Water: 50 ml (approximately 3.5 tablespoons)
- Spices to sprinkle on top: paprika: 1 teaspoon, curry: 1 teaspoon
- Parmesan Cheese: ¼ cup, grated
- Olive Oil to sprinkle on top when baked
With these readily available ingredients, you're all set to embark on your keto zucchinella culinary adventure!
How to make keto zucchinella
- Preheat the oven to 375°F (190°C).
- Slice zucchini and onion to thin slices.
- In a mixing bowl, combine the zucchini and onion with a 2 pinches of salt, pinch of pepper & 1 teaspoon paprika. Toss them together until evenly distributed.
- In a separate bowl whisk the egg, salt, almond flour, coconut flour & mineral water. Mix everything thoroughly until a well-combined mixture is formed.
- Combine with prepared zucchini and onion and distribute on a sheet pan layered with a parchment paper.
- Sprinkle the top with 1 teaspoon of curry, 1 teaspoon of paprika, and grated ¼ cup of parmesan cheese. It will give your zucchinella delightful taste and a golden, crispy crust.
- Place the baking dish in the preheated oven and bake for approximately 20 minutes or until the top turns golden brown and the zucchinella is cooked.
- Remove the zucchinella from the oven and allow it to cool slightly. Cut it into desired portions and serve it as a side dish or as a main course alongside a fresh salad. This low-carb delight is perfect for lunch, dinner, or even as a snack with a sour cream or similar dipping sauce.

- Large egg
- Salt and pepper to taste
- Paprika 1 tsp
- Almond flour ⅔ cup/70 g/2.46 oz
- Coconut flour 1 TBS/15 g/0.53 oz
- Mineral water 50 ml/3.5 TBS
- Spices to sprinkle on top:
