Lemon season just started in Croatia and farmers markets are loaded with fresh lemons. I just can't resist not to buy full boxes. Suddenly, my home is overloaded with lemons! But not for long. I knew I will make some lemon dessert. Apparently, I made two new lemon desserts during the weekend. First, I will write about easy and fast lemon and walnut cake bars. 1 bar has only 1 g of NET carbs!
That lemon and walnut combination is so great! I combined it by accident, just because I have a lot of fresh walnuts. And it was a great hit among my "family gang". 😀We have few walnut trees, so I am using walnuts in my recipes very often.
If you're reading my blog you probably know that my son has to help me when I'm cooking and baking. This time he was grinding the walnuts with this old fashioned grinding mill. I am using a food processor in my kitchen too, but I really like the texture of nuts ground with this machine. It was a great fun for my son, and not so great for me (I had to clean later), but it's worth it. If you have children, include them in as many jobs as possible. Children's participation in house activities is really beneficial for their development and help you to spend more quality time with them. Children will remember it as a nice memory forever. 💕
Especially include children in cooking because children tend to be less picky when they help with food preparation.
But coming back to walnuts! Walnuts are keto friendly and so healthy for you! They are full of vitamins and minerals. Containing only 7 g of NET carbs per 100 g! That's why this lemon and walnut bars are are so healthy but also easy to make and not time consuming at all! This recipe doesn't require any prior baking experience. If you are totally new to cooking and baking you will be able to make it. Just follow my step by step recipe with photos.
INGREDIENTS FOR LEMON AND WALNUT CAKE BARS
Walnut crust
Ground walnuts 2 Cups
Coconut flour 1 TBS
Butter 70 g
Sweetener ¼ cup
Lemon zest of 1 lemon
Creamy lemon layer
3 medium eggs
Lemon juice of 2 medium lemons
Sweetener 1 cup
Lemon zest of 1 lemon
Butter 100 g
Procedure
Combine grounded walnuts, coconut flour, cold butter, sweetener, and lemon zest and press it in the baking sheet.
Put it to bake for 5 minutes in a preheated oven (180°C or 350°F with vent).
For the lemon cream, combine 3 eggs, juice of 2 lemons, lemon zest of 1 lemon and sweetener. Mix it well on a low heat until smooth cream is formed.
When cream formed, add butter and mix until the cream is smooth and glossy.
Pour the cream on the crust.
Put some walnuts on top.
Bake for 5 minutes (180°C or 350°F with vent) or until the cream is firm (not liquid anymore).

- Walnuts meal 2 Cups
- Coconut flour 1 TBS
- Butter 70 g
- Sweetener ¼ cup
- Lemon zest of 1 lemon
- CREAMY LEMON LAYER
- 3 medium eggs
- Lemon juice of 2 medium lemons
- Sweetener 1 cup
- Lemon zest of 1 lemon
- Butter 100 g
Instructions
- Combine walnuts meal, coconut flour, cold butter, sweetener, and lemon zest and press it in the baking sheet.
- Bake the crust for 5 minutes in a preheated oven (180°C or 350°F).
- For the lemon cream, combine 3 eggs, juice of 2 lemons, lemon zest of 1 lemon and sweetener.
- Mix it well on a low heat until smooth cream is formed.
- When cream formed, add butter and mix until the cream is smooth and glossy.
- Pour the cream on the crust.
- Put some walnuts on top.
- Bake for 5 -10 minutes (180°C or 350°F) or until the cream is firm (not liquid anymore).

No, I haven't tried to freeze, and I really don't know how it would be when unfreeze. Theoretically you can do it. I remember that my mom used to freeze similar cakes after Christmas if a lot of cake left uneaten. In the fridge you can keep it for 1 week.
