May is my favorite month! I became a mother of my both children in May and in general I like this month. One of my favorite moments in May is when elderberries are in the bloom.
Elderflower has so good and calming smell and reminds me on my happy childhood. I really like elderflower and I am always looking for ways to preserve it and enjoy it as long as it's possible.
That's why I make a large amount of elderflower syrup and now I created this wonderful elderflower cake.
This elderflower cake is so fluffy and delicate but at the same time it's rich and tasty. Usually cakes with elderflower syrup are loaded with sugar but my elderflower cake is sugar free, totally low carb and gluten free.
Elderflower aroma in this keto elderflower cake is complementing coconut flour and cream cheese perfectly. Because of the sugar free elderflower syrup this cake is perfectly sweet and moist, but very low in carbs. Sugar free elderflower syrup recipe you can find here. If you don't find elderflower but you wish to make this cake, use keto lemonade instead of keto elderflower syrup. That's how you will get the lemon cake instead of elderflower cake but you will probably like it.
Ingredients for sugar free elderflower cake
2 L egg
Low carb sweetener ½ cup (Swerve or Sukrin) or combination of erythritol and stevia
Zest of 1 lemon 🍋
Yogurt 1 cup
Baking powder ½ tsp
Coconut flour ⅔ cup
Coconut oil melted ⅓ cup
Elderflower syrup ⅓ cup
Elderflower filling ingredients
Cream cheese 400 g
Softened butter 2 TBS
Vanilla extract 1 tsp
Elderflower syrup for moisture 3 TBS
Low carb powdered sweetener ½ cup (Swerve or Sukrin or xylitol). If using xylitol be aware that is toxic for dogs.
How to make keto low-carb elderflower cake
Beat the eggs with the sweetener and lemon zest.
When the eggs with sweetener are fluffy, add yogurt, baking powder, and coconut flour.
Mix all together until nicely combined.
When the mixture is combined, add melted coconut oil and elderflower syrup and mix until you get a nicely combined mixture.
Put the mixture in a cake tin with the parchment paper at the bottom and bake in a preheated oven at 180 C (356 F) for 20 - 30 minutes or until baked.
When the cake is baked leave it to completely cool and put the filling/frosting on the cake.
How to prepare the filling/frosting for elderflower cake
Mix cream cheese, softened butter, powdered sweetener and vanilla. Mix it until you get nice and smooth filling.
Take completely cooled cake, pour 3 TBS of keto elderflower syrup on top an put the filling on top and on the sides of the cake. If your cake is a little bit drier you can add more keto elderflower syrup.
If you are confident in your cutting skills you can cut the cake in half and put the half of the filling between the two halves. Half of the filling put on top and on the sides. As you can see I like to cut my cakes to get at least two layers, like you see on the photos of this cake. However, you don't need to do it because this cake is really soft and moist, especially when the cake soak all the elderflower syrup.
If you decide to cut the cake you can also pour some elderflower syrup on each cake layer.
I put few elderflower blossoms to garnish the cake. If you wish you can do the same.
Royal wedding cake goes keto
I am very busy working mum so I don't have time to watch the TV or to pay attention to celebrities and royals, that's why I just recently found out that the elderflower and lemon cake was a wedding cake on the royal wedding of Prince Harry and Meghan!

you mention it's for 12 people so I suppose the size of my pan is about the same size

Hi Stella, it's actually 12 servings, it's divided to serving sizes. But this is the amount for a small cake tray, size is written in the notes. Probably you used big cake pan.
