Last weekend we worked really hard in the garden, trimmed the grass and planted veggies. After we finished I made a quick lunch and after the lunch I just needed a cup of coffee and a strong cake that goes with my Turkish coffee.
I don't have to explain that these low carb blondies were a total win! So yummy, melting in the mouth plus crunchy chopped walnuts. So good combination.
Walnuts and chocolate are usual combination I really like and in this recipe they go perfectly together. I have to admit that I just didn't have time to make some great photos. As I was trying to photograph, my family members were just grabbing the cakes.
That's why I am afraid that you won't be able to see how great is this keto blondies recipe. I just couldn't imagine better keto cake for my coffee ☕️ time than this one. And the feeling when you need something great and you get it! That's the best thing of all. I just can't stand the feeling when craving for something that I can't get. Fortunately, this time it wasn't the case. This keto blondies recipe with dark chocolate and walnuts came out perfectly.
Walnuts on keto
Walnuts and keto goes perfectly together, and I like to have walnuts as a snack, put them in cakes, salads and even roast them with veggies. If you don't like or don't have walnuts you can use pecans or roasted hazelnuts. They could fit good in this recipe and they won't raise the total net carbs count so much.
Are walnuts good for keto?
Walnuts are delicious type of nuts if you're following a keto lifestyle. They are low in carbs and 65% good fat. Walnuts are also rich in magnesium and vitamins B, so they are great for you if you don't have a nut allergy.
Ingredients for keto blondies
Almond meal or flour 2.5 cups (266 g/9.38 oz)
Coconut flour 1 TBS (7 g/0.25 oz)
Low carb sweetener (Swerve, Sukrin or combination of erythritol and stevia) 1 cup
Baking powder ½ tsp
Pinch of salt
Butter melted 1 cup (220 g/7.76 oz)
2 L eggs
Vanilla extract 1 tsp
Dark chocolate chips ⅔ cup (100 g/3.52 oz)
Walnuts 1 cup (100 g/3.52 oz)
How to make keto blondies
Combine almond flour with coconut flour, sweetener, baking powder and a pinch of salt.
Add melted butter, whisk it and add eggs and vanilla.
When mixture is nice and smooth, add chopped walnuts and dark chocolate chips.
Bake keto blondies on 175 C (350 F) for 20 minutes or until baked.
Enjoy this keto cake with a cup of coffee or tea or as a keto dessert after a nice keto meal.

- Coconut flour 1 TBS (7 g/0.25 oz)
- Low carb sweetener (Swerve, Sukrin or combination of erythritol and stevia) 1 cup
- Baking powder ½ tsp
- Pinch of salt
- Butter melted 1 cup (220 g/7.76 oz)
- 2 L eggs
- Vanilla extract 1 tsp
- Dark chocolate chips ⅔ cup (100 g/3.52 oz)
- Walnuts 1 cup (100 g/3.52 oz)
Instructions
- Combine almond flour with coconut flour, sweetener, baking powder and a pinch of salt.
- Add melted butter, whisk it and add eggs and vanilla.
- When mixture is nice and smooth, add chopped walnuts and dark chocolate chips.
- Bake keto blondies on 175 C (350 F) for 20 minutes or until baked.

Hi. I just made this and the sides are brown, but the center is VERY jiggly! It doesn’t look baked at all. I put it in an 8 inch x 8 inch pan. I put a tooth pick in the center came out shiny but clean. I have a feeling this is not going to turn out well. Smells yummy though.

Are you using regular dark chocolate chips or sugar free chocolate chips?

Hi Jen, I try to always use sugar free chocolate chips. Here we have some local brand sweetened with erythritol and stevia.
