When you’re eating carbs it’s so easy! You can always grab some bread or potato and add anything with it and you have a meal! When on low carb/ keto obviously is not like that. You have to think in advance and prepare yourself. In our pre-keto life I remember how often we ate potatoes. We enjoyed our mashed potatoes with any kind of meat and a lot of green salad.
When we started with keto, we gave up on potatoes. But the memories stayed. 😬
I decided to try cauliflower mash. Few times I tried and it wasn’t great. But as you might heard, wise people say – you should never give up! Something good can happen! And something good happened, actually something delicious!😋 Once I didn’t know what to make as a side dish to some meat so I cooked cauliflower I had in my fridge. And I was in dilemma – what to put inside? And like in every proper keto family fridge, I had heavy cream and some boiled eggs from the day before. I jut threw it in the pot with cooked cauliflower. And the result was amazing! I will never ever again have nostalgia for mashed potatoes! This is much, much better! And it is totally keto – it has more than 80% fat and very low in carbs – only 9%.
I have even a video – it’s not so beautiful as some “real food bloggers” videos – but if I didn’t mute it, OMG you would immediately understand that my video is great despite the circumstances (cooking with two babies).😂

Ingredients for the best cauliflower mash
Cooked cauliflower 400 g
Butter 100 g
Heavy cream 100 ml
2 boiled eggs
Salt to taste
Procedure
Cook cauliflower until soft.
Boil 2 eggs.
Strain the cauliflower. I like to use this type of strainer.
Mix cauliflower with butter, eggs, heavy cream and salt until smooth.
This type of hand blender works the best in this case.
Serve the mash with some nice meat or veggies. It goes great with our Pork chops.
