Baked feta cheese keto recipe! Delicious goat cheese full of flavor baked in the oven with onion, pistachios and olive oil.
This is so easy feta cheese recipe and I like to make it for my keto breakfast or dinner. It's fantastic keto appetizer and food for gathering with friends or even to bring with you on a keto picnic.
Baked feta with a slice of keto bread
When it's just baked you can serve it with some keto bread like this keto focaccia or keto ciabatta. It's also good with my keto coconut bread if you like coconut. For me it's the best to have it just baked, still warm, while sitting outside in my garden with a glass of red wine in the evening.
You will love it with a generous amount of extra virgin olive oil on top and some Mediterranean herbs. Fresh and dried herbs are fantastic. You can use basil, rosemary, oregano, thyme... Whatever you have and like. This is a real Mediterranean keto food to enjoy outside in a great company.
Ingredients
Feta cheese 200 g/7.05 oz
Extra virgin olive oil 4 TBS
Pistachios ½ cup/100 g/3.53 g
Bacon finely sliced 1 cup/100 g/3.53 oz
Onion 50 g/1.76 oz
Garlic 2 cloves
Fresh rosemary
Cherry tomatoes 4-6 pieces
Sea salt pinch
Low carb sweetener (brown is better, Swerve or Sukrin brown) 1 tsp
Pepper to taste
Optional herbs
Oregano
Basil
Thyme
How to make it?
On a parchment paper put feta cheese, finely sliced bacon, pistachios, onion, cherry tomatoes, garlic cloves , rosemary and Mediterranean herbs.
Drizzle everything with extra virgin olive oil.
Put some sea salt on the tomatoes and onion. Feta cheese and bacon is usually salty enough so there is no need for extra salt.
Sprinkle the low-carb sweetener on feta cheese.
Bake it for 10 - 20 minutes at 180C (356F) in a preheated oven or until golden brown on the edges and the onion is baked.
When it's baked put some freshly ground pepper on top and serve it warm with leafy green salad, keto bread, and extra virgin olive oil.
