Have you ever visited any Mediterranean country during the summer? If you have then you will immediately know, and if not, I will try to describe a little bit of Mediterranean spirit. Every summer we are on the Mediterranean coast, in Croatia of course, and the days are very hot so we try to refresh ourselves in the sea.
Evening usually brings some relief that comes with a fresh sea breeze. Because of the heat during the day, we don't eat so much. However, when the sun is gone, appetite is back and there is nothing better than a nice plate with some good mature sheep cheese, anchovies or prosciutto and a lot of olive oil to dip your keto focaccia in it. Of course, a glass of red wine 🍷 has to follow too. 💕
Olive oil bread dip
Relaxing focaccia dipping into the olive oil for me represents freedom, vacation, summer and all good sensations related to nice and relaxing holidays on the coast. This keto focaccia bread recipe is all of that and more, I ate so many original focaccia breads and I am sure this one will defiantly meat your expectations.
Original keto Mediterranean taste is combined in this keto bread - coconut, almond and sesame flours are in a perfect balance with olive oil. Cottage cheese is giving moisture but not too much, that's why this low carb bread is moist but still great for dipping as it absorbs olive oil greatly. Because this keto bread is gluten free bread also, you won't have a heavy feeling after meal or a snack.
I like to pour olive oil on a plate, season it with salt and pepper, oregano and basil, and sometimes even with a few drops of balsamic vinegar and dipping my healthy focaccia in it.

Ingredients for keto focaccia bread
Blanched almond flour ½ cup (50 g)
Coconut flour ¼ cup (30 g)
Sesame flour 2 TBS (10 g)
Baking powder 1 tsp
Pinch of salt
Olive oil ¼ cup
1 L egg
Cottage cheese 1 cup (250 g)
Herbs to your taste (oregano, basil, rosemary)
Garlic powder if you like
Black olives 5 pieces
How to make gluten free low carb keto focaccia bread
Mix all dry ingredients and add eggs, olive oil and cheese.
Whisk it or mix well until all ingredients combined and cheese crumbles not visible anymore.
When the mixture is well combined, add black olives cut in 3 pieces, combine it and spread on a parchment paper with a spatula.
Bake it on 180C (356F) 15 - 20 minutes or until baked.
Leave it to chill few minutes and start your dipping! 😋💕
As we are currently living in a rural paprika land Baranja, and having delicious homemade ajvar, I just can't resist to spread a thick layer on my focaccia slice! 😀🌶
