Do you like Italian food? Here is a fantastic low carb Italian keto dessert. You can make this ricotta pudding one day ahead and keep it in the fridge if you plan some keto party or celebration.
Traditionally this pudding contains Marsala wine but if you avoid alcohol you can skip it. Even without Marsala this keto dessert will be rich in flavor because of vanilla extract and orange essential oil. Ricotta cheese is fantastic in combination with orange. Oranges on keto
Oranges are not recommended on keto diet but you can use orange zest and orange essential oil. Organic orange zest will give a lot of flavor to ricotta pudding and other desserts where you would normally put orange. If you don't find organic orange zest, use edible essential oil.
Edible orange essential oil
Essential oils are fantastic if you want to get the smell and flavor of fruits. I love essential oils, cooking with them and putting to cakes and other food. I recommend you to use this essential oils because this oil is certified for oral use and you can easily use it when you want orange flavor. These oils are pure and produced under very high quality standards. For this dessert you will need only 3 drops! Don't use oils that are not certified for oral use! Ingredients
Ricotta cheese 1 cup/250 g/8.82 oz
Heavy whipping cream 1 cup/250 ml
Sweetener powdered swerve, xylitol or combination of erythritol and stevia ½ cup
Vanilla extract 1 tsp
Edible orange essential oil 3 drops
Organic orange zest to decorate
Marsala wine 2 TBS (30 ml) (optional)
Fresh berries 1 cup/100 g/3.53 oz
How to make keto ricotta pudding?
Mix ricotta cheese with powdered sweetener, vanilla extract, marsala wine and orange essential oil or orange zest.
Separately mix heavy whipping cream until you see peaks.
Gently combine ricotta cheese mixture with mixed heavy whipping cream until you get smooth combination.
You can add marsala wine in ricotta if you like. In original Italian ricotta pudding goes Marsala wine but instead I use vanilla and orange.
At the end you can add berries that you like. It could be raspberries, blueberries, red currants or mixed berries. Of course, you can put some strawberries also!
