Few days ago we went to one private Easter garden with our children. They could watch the squirrels 🐿 and play with rabbits 🐇 and chickens. 🐓 Afterwards they went to an eggs hunt. It was so beautiful experience for all of us! At the end they served us with a carrot cake with orange juice jelly on top. Of course, I couldn't eat that cake, as it was not sugar free but I was definitely inspired to make my low carb and gluten free carrot cake. To be even more delicious, I put on top fantastic keto jello, and I have to proudly say - my low carb carrot cake rocks! It was tasty, sugar free, gluten free cake with wonderful smell! 🍰💕
My children definitely approve this yummy sugar free dessert and I will be making this delicious keto carrot cake as one of our Easter keto desserts. Gluten free Carrot 🥕 Cake bottom
Carrots shredded 200 g
Ground almonds ½ cup (50 g)
Coconut flour 4 TBS (30 g)
Low carb sweetener like Swerve ½ cup
Cinnamon 1 tsp
Baking Powder 1 tsp
Vanilla extract 1 tsp
Greek yogurt 2 TBS (30 g)
2 large eggs
Sugar free low carb carrot cake cream cheese filling
Cream cheese 2 cups (500 g)
Low carb sweetener ½ cup
Lemon zest of 1 lemon 🍋
Vanilla extract 1 tsp
Ingredients for keto jello layer
Water 1 cup
Rooibos tea quantity equivalent to 1 tea bag
Low carb sweetener 2 TBS - ¼ cup
Lemon juice 2 TBs
Grass fed gelatin 2 TBS (20 g) and if you want to have harder and really chewy jello on top you can use 3 TBS (I made it like that once, by accident, and my children liked it!).
Orange essential oil 2 drops or orange aroma
How to make low carb carrot cake - step by step recipe
Put the carrot in a food processor to get small pieces or shred the carrot with the manual shredder.
When carrot is completely shredded, add dry ingredients, vanilla, eggs and greek yogurt and continue to mix in a food processor or with the whisk if you don't use a food processor.
After mixture is done, bake it in a a cake tin, on a parchment paper in preheated oven on 180C (356F) for 15-20 minutes or until is baked.
Preparation of keto cream cheese filling
Mix or whisk cream cheese with powdered sweetener and vanilla extract. Add freshly grated lemon zest of 1 lemon.
Put the cream cheese filling on a cooled bottom layer.
How to make keto jello layer
Keto jelly layer of this carrot cake is so good and there is a possibility (if you have kids) that your kiddos start eating this layer first and destroy the cake if you leave it unattended.
Sugar free jelly is easy to make, even if it sounds complicated and it's your first time - worry not! Here are my step by step instructions with pictures of the procedure!
For the beginning, prepare strong rooibos tea. ☕️ You need 1 cup of tea. Rooibos tea is aromatic African tea and it's aroma compliment to aromas of carrot, orange and cinnamon incredibly well.
Put the tea, lemon juice and sweetener in the saucepan on the stove and bring it to boil. When start to boil add gradually beef organic gelatin and whisk. Whisk until gelatin dissolved. When gelatin dissolved, add 2 drops of edible orange essential oil or add orange 🍊 edible aroma for cakes and desserts.
After gelatin is completely dissolved, leave it to cool a little bit (just shouldn't be hot, but shouldn't be totally cold because it will harden as it's cooling).
When it's not hot anymore, pour it gently over the cream cheese layer and leave it in the fridge for at least 45 minutes.
Wonderful smell of rooibos tea!
You will feel the smell of this low carb and gluten free carrot cake, especially combination of lemon, rooibos tea and orange essence is out of this world! I discovered this combo by pure accident of mixing ingredients in my kitchen. I am sure you will enjoy it, as my keto family did.
