What do you do when you woke up on Saturday unusually early and you crave for a nice, big, rich piece of keto black forest cake or Schwarzwald cake as it is called in Europe? Well, because I am who I am, I just stood on my feet and made it! OMG! This German classic is so great, even in keto version. Like it was meant to be ketofied one day. ππ
For all of you who never heard for this great cake, here you can read something about the history of this famous German cake. This delicious cake goes great after one keto Wiener Schnitzel with the cauli mash! π My recipe is for large baking dish of 11 inch or 28 cm. I don't know if you can see it in the photo of this cake but bottom layer is moist but firm, just perfect! Layers are nice and firm and incredibly tasty! This cake is perfect for any birthday or special occasion, as well as for a dessert after some nice weekend lunch or diner. And it is incredibly easy to make! π
Ingredients for Keto Black Forest Cake Keto LCHF Schwarzwald Cake
For the bottom layer
9 eggs separated
ΒΌ cup of coconut flour
ΒΌ cup of cocoa powder unsweetened
1 cup of sweetener (Swerve)
Baking powder 1 tsp
1 teaspoon of vanilla essence
Β½ cup (125 g) of melted butter
1 pinch of salt
For the cream layer
1 cup (250g) mascarpone cheese
2 cups (500 ml) heavy cream
Β½ cup of sweetener (you can put more if you like it sweeter
1 teaspoon of vanilla essence
Β½ cup of Cherries π for the inside and few cherries π for the top to look nice πππ
Dark shredded Chocolate π« to garnish.
Procedure
Separate egg yolks and egg whites.
Mix egg yolks with coconut flour, cocoa powder, melted butter, vanilla, baking powder, and a pinch of salt.
Beat the egg whites with sweetener.
Gently mix both mixtures together (mixture with egg yolks and egg whites).
Put the mixture in 11 inch or 28 cm baking dish and bake on 175Β°C for 20 minutes or until mixture baked.
When the bottom layer is baked, set it to cool.
In the mean time mix mascarpone cheese, heavy cream, sweetener and vanilla until thick mixture is formed,
When the bottom layer is cooled, cut it in the middle with a large knife.
Put the half of the cream on the bottom layer and cherries on top.
Cover the cream and cherries with the second part of a bottom layer.
Put another half of the cream on the cake and decorate it as you like - with cherries, chocolate, etc.
Leave it to cool if you can wait.

This cake looked amazing . I gathered my ingredients yesterday and made it with daughter today . Disappointed does not look like the picture at all the cream filling in not like whipping cream / mousse looking it crumbled , water got separated no one wants to eat it ! Yey happy bday to me wish i could attach picture . What a waste .had a cream went to garbage

Dear Krzysia, I am sorry to hear this. Is it possible that you have been mixing the cream for too long? This sounds too me like it was the case. To get nice and smooth cream, you should mix it until peaks are formed, not longer. Because if you continue mixing whipping cream after the peaks are formed it will start turning to butter. So basically, you made butter (crumbles) + buttermilk (that separated water you could see).

I made this Black Forest Cake "SchwarzwΓ€lder Kirschtorte" yesterday for todays Motherday and I can't wait to try it and if my Mom like it too!?!
I made a tsp Xantham Gum into the cream just to make sure that it wouldn't fall off of the cake and I cooked the cherries with Xylit and also a tsp Xantham Gum and a lttle bit rum because this consinstancy and taste is more like the original SchwarwΓ€lder Kirschtorte here in Germany βΊπ€©π€!

I love the recipe , but the special German kick is missing, what gives the original Black forest cake itβs taste. The original cake has cherry brandy in it. You sprinkle a little on the baked dough sheet , and also a little in the cherry filling. Most recipes in the United States leaving it out, what unfortunately changes the entire taste of the original cake. Cherry brandy is a famous produced liqueur from the black Forrest.

Also, I have never been successful in cutting a cake layer in half evenly. One side ultimately comes out thinner than the other. Any tips?

Well, you can try with long knife. With long knife it is possible to cut it more precisely. If you are sure that you will not be able to do it - bake 2 layers separately. Just take the half of the mixture in one baking dish and another in a second dish and bake. For any case- here is a tutorial how to cut it properly. Let me know if you succeeded!
