Keto breadsticks or keto grissini (no nuts, grain free, gluten free) are delicious low carb snack without nuts! Here is a master recipe with 3 ways to prepare low carb breadsticks!

I like breadsticks and we are having this type of Italian keto breadsticks very often. All my family members and friends like them. I like to serve low carb breadsticks with prosciutto and keto arugula pesto. It’s so good combination! And fantastic keto bread replacement.

Keto breadsticks or grissini are my favorite Mediterranean appetizer. I like to have them for my keto breakfast and late night snack. Also they are perfect for staying keto while traveling. It’s very convenient to bring few breadsticks with you anywhere.

I have already a collection of proven keto breads and pastries on my blog but this is the first time for me to publish keto breadsticks recipe.

Keto bread no almond flour and nut free

Very often my readers are asking if they can swap some of the nut flours in my recipes for seeds and seed flours because of intolerance or allergies they have. So, I tried few combinations of keto bread with seed flours. Because I like the taste of different combinations, I decided to publish keto breadsticks without nuts recipe as a master recipe. So you can choose the flour that you have or you like and make these low carb grissini.

Tips for keto breadsticks without nuts

For this keto breadsticks you will need 1 egg, parmesan cheese, coarsely ground flaxseeds and seed flour of your choice.

Use ground/milled flaxseeds or flax meal. I was using coarsely ground flaxseeds. Whatever seed flour from the optional flours you choose, I recommend you to use ground flaxseeds as a base and add other flours to that base.

Finely grated parmesan cheese/Parmigiano cheese – you need really fine grated cheese. It should have a structure of the flour. It will be easier to make keto dough out of it and it will be easier to form a nice and round breadsticks.

Seed flours for keto baking to choose

Sesame seed floursesame flour is beautiful low carb flour to bake with and it goes great with ground flaxseed. You might find it a little bit bitter or with a mild bitter under taste. I love it but some people could be sensitive to that. If you like sesame flavor, go for it!

Sunflower seed flour is delicious low carb flour and you can use it in combination with sesame flour or instead of sesame flour if you like. It’s also very good for low carb baking. You will love it if you like seeds.

Peanut flour is fantastic and I like to add fine defatted peanut flour to my breadsticks. If you have allergy to peanuts you can just omit peanut flour and put more sesame or sunflower seed flour. If you don’t have allergy, I recommend you to use combination of all of the flours. It will be nutty and delicious.

Optional spices and herbs

Garlic powder – pinch of garlic powder is nice addition to seed flours. It will lift the taste of not so intense seed flour. It goes especially good with sunflower seed flour.

Dried oregano and basil – that’s great combination for this Mediterranean style keto food. It goes perfectly. Pinch of dried herbs will definitely bring Mediterranean aroma.

Dried fried onion – if you want more flavor, you could be happy with a pinch of dried fried onion in your breadsticks. But, be careful because onion will increase carbs in your breadsticks!

Ingredients

  • Ingredients for keto breadsticks with sunflower seed flour
  • Parmesan cheese finely grated 2/3 cup/75 g/2.65 oz
  • Ground/milled flaxseeds or flaxseed meal 1/2 cup/45 g/1.59 oz
  • 1 M egg
  • Butter softened 2 TBS/25 g/0.88 oz
  • Pinch of salt
  • Optional herbs - pinch od fried basil and oregano
  • Optional powdered garlic pinch
  • Sunflower seed flour 1/2 cup/45 g/1.59 oz
  • Ingredients for keto breadsticks with sesame seed flour
  • Parmesan cheese finely grated 2/3 cup/75 g/2.65 oz
  • Ground/milled flaxseeds or flaxseed meal 1/2 cup/45 g/1.59 oz
  • 1 M egg
  • Butter softened 2 TBS/25 g/0.88 oz
  • Pinch of salt
  • Optional herbs - pinch od fried basil and oregano
  • Optional powdered garlic pinch
  • Sesame seed flour 1/2 cup/40 g/1.41 oz
  • Ingredients for keto breadsticks with sesame and peanut flour
  • Parmesan cheese finely grated 2/3 cup/75 g/2.65 oz
  • Ground/milled flaxseeds or flaxseed meal 1/2 cup/45 g/1.59 oz
  • 1 M egg
  • Butter softened 2 TBS/25 g/0.88 oz
  • Pinch of salt
  • Optional powdered garlic pinch
  • Sesame seed flour 1/4 cup/20 g/0.70 oz
  • Peanut flour defatted 1/4 cup/20 g/0.70 oz

Instructions

Preheat oven to 180 C/360 F.

Mix flours with finely grated parmesan cheese, pinch of salt and optional herbs and garlic.

Add softened butter and egg.

Mix everything together with a spoon or spatula and finish with your hands. You should get keto dough.

Form 8 breadsticks by rolling keto dough with your hands.

Sprinkle with sesame seeds if you like.

Bake in a preheated oven with vent for 15 - 20 minutes or until baked.
