This is my children's favorite food - chicken fingers fried in delicious keto batter with coconut flour and sesame flour. Meat is so tender, moist and tasty. Usually I make huge quantity because my children eat this for lunch, dinner and breakfast next day.
This batter for frying won't be crispy, it's very tender and delicious. It's perfect for children, also as a baby food for for baby led weaning.
Fried veggies in keto batter
My children's nanny is a real master of this keto batter so she is frying veggies in this batter, like zucchini, celery root and similar. Veggies fried like that are amazing plus this easy keto cheese sauce from the microwave. So good and perfect keto recipe for a working parents!
I like to eat these keto chicken strips with very simple keto dip that I make with mayonnaise and sour cream. Basically, I just mix 2 TBS of sour cream and 1 TBS of mayonnaise, and season it with a pinch of salt and freshly ground pepper.
It's also great if you serve it with leafy green salad, cauliflower mash or broccoli mash.
Ingredients for fried keto chicken strips
Chicken tenders 600 g
Lard or coconut oil 1 cup for frying
Ingredients for keto batter
2 L eggs
Coconut flour 5 TBS/35 g/1.24 oz
Sesame flour 5 TBS/25 g/0.88 oz
Liquid yogurt ⅓ cup/100 ml
Heavy whipping cream ⅓ cup/100 ml
Salt ½ tsp
Optional spices and additions to your taste
Ground pepper
Red paprika
Powdered garlic
Chili pepper
Dried or fresh chopped herbs (parsley, basil, oregano...)
Parmesan cheese shredded
Sesame seeds
How to make keto chicken fingers?
Prepare chicken strips/ chicken tenders and season with salt and pepper to your taste. You can add other other optional spices.
Prepare keto batter.
How to make keto batter?
Whisk the eggs and set aside.
Mix all dry ingredients - coconut flour and sesame flour with salt, spices and herbs you like.
Add dry mixture to eggs, add yogurt and heavy whipping cream and whisk until you get smooth keto batter.
Frying procedure
Dip each chicken tender into prepared keto batter and put it on a hot lard or coconut oil.
Fry it on a medium heat until golden brown and meat completely cooked. Be careful and don't fry it on a very high heat and too hot lard or oil because it might burn and become dry.
Serve fried chicken keto tenders with salads, cauliflower mash or broccoli mash. Also you can dip them in some nice keto dip. I was using a combination of sour cream and mayonnaise.
