I have a small cake tin that was never used. Since I have a large family and have to cook and bake huge amount of food and cakes, I always use huge pots and trays. Some time ago I have bought one cute little 17 cm (6-7 inch) cake tray and it was sitting somewhere in my kitchen cabinet, alone, betrayed and never used. I just wanted to use it at least once. And, it was my lucky day, because what I made was so delicious that I wanted to write about and publish immediately! OMG, I wish my little low carb birthday cake was a big low carb birthday cake! 😀
Perfect low carb cake for a small celebration!
Cake came out perfectly and I've published it on my Instagram, but still didn't know how to call this little cake miracle. Suddenly, one nice person left a comment - oh, I need this recipe for my boys birthday! 🎂 That's how I named this cake! Little low carb birthday cake for a small celebration. Cake is actually for a small company of 4 people. If you would like to make it for a big celebration, use ingredients for this small cake x 4! You will get 4 big cake layers and don't forget to make cream amount 4 times bigger! You will enjoy this cake! I think this is one of the tastiest low carb cakes I've ever tried! And believe me, I ate so many cakes in my life in few continents and hundreds of countries all around the world in the best restaurants and patisseries.
If you don't feel confident in your math, I promise I will make another post with a large version of this little low carb birthday cake. Until then I recommend you to make my Keto Schwarzwald Black Forest Cake. It's delicious and it was my most popular recipe in 2018! Many people on keto and low carb lifestyle choose that cake for their special moments, like Christmas dinner, birthdays and other celebrations.
Ingredients for a little low carb birthday cake
For the bottom layer*
2 egg whites
1 TBS coconut flour
2 egg yolks
40 g (¼ cup) butter softened on a room temperature
¼ cup swerve or erythritol
50g dark chocolate 🍫
Pinch of salt
1 TBS coconut oil
*Quantity is for the bottom layer that should be cut in half to form 2 layers or you can bake 2 layers separately. It is for the 17 cm or 7 inch cake tin.
Ingredients for the frosting cream
1 cup (250 g) mascarpone
½ cup heavy whipping cream
1 teaspoon vanilla essence
5 - 10 drops of stevia or another powdered low carb sweeter of your choice, like swerve or erythritol
Procedure to make a bottom layer*
*You can make 1 bottom layer from the listed ingredients and when baked cut it in half or you can divide the mixture and bake two layers separately.
Mix egg whites until peaks formed.
In a separate bowl mix egg yolks, butter and sweetener.
Melt chocolate with a pinch of salt and a coconut oil in a double boiler or in a microwave.
Pour melted chocolate in a yellow mixture and combine it well to get chocolate mixture.
Very gently combine chocolate mixture with a coconut flour and a mixture made of egg whites.
Put the mixture in a small cake try and bake on 180C (356F) for 15 minutes or until baked.

When baked set it to completely cool and then cut it in half. it has to be completely cold before cutting. If you are not confident in your cutting skills, bake 2 layers separately.
Preparation of the cake frosting
Mix all ingredients together. Don't over mixing!
Put half of the frosting on the first layer. Half put on the top. I recommend you to use an icing bag for the top because it will look like from a professional pastry shop, only with much better taste! I have one washable icing bag and using it for many years. On below photo you can see what was the top I was using.
On top you can put fresh berries like raspberries, but strawberries and blueberries would be also good.
Cool the cake properly before serving.

You left out instructions for the egg whites. Do you fold them in after combing yolks and chocolate?
