When someone says Croatia, first association is a nice sandy beach on the coast. But, currently I live in the continental part in a birdwatchers paradise in Baranja and it's cold and snowing 🌨 these days. When the weather is cold like this, I like to heat my keto family with some warm low carb meal you can eat with the spoon. This time I had fresh pork neck meat so I decided to pair it with coconut.
Last month I bought an annual supply of curry powder when I was visiting Germany, at the Heidelberg Christmas market so today it was a perfect occasion to use it. For this curry I was using yellow curry mix called Java curry and it was delicious. I was cooking in a stainless-steel wok like the one below just because I like to cook in a large dish, but you can use your favorite dish that is large enough. Also, I like to cook with wooden spatula. I don't know why, I just inherited that habit from my mum and grandma, and wood is somehow natural and giving a nice feeling when cooking.
Low carb pork and coconut curry recipe for family on keto
Ingredients for low carb pork and coconut curry 🍛
2 TBS of coconut oil
Pork neck meat without bones 300 g
1 piece of fresh ginger
1 carrot 🥕
1 celery stick
Broccoli 200 g
1 can of coconut milk (400 ml)
Water 100 ml
Salt 1 teaspoon or more to taste
Pinch of freshly ground pepper
2 teaspoon of mild curry powder
Fresh parsley to garnish
Spring onion to garnish
Procedure to make low carb pork and coconut curry
Melt coconut oil
Cut the meat in a small cubes and put it on a hot oil.
Add chopped onion and carrot.
Stir until meat and onion golden brown.
Add spices and stir well.
Add broccoli and stir.
Add coconut milk and water.
Cover it and cook 15 minutes.
Serve this low carb pork and coconut curry with some finely chopped spring onion and parsley on top. You can eat this pork and coconut curry with some nice keto bread or with our keto cauliflower mash with eggs or keto broccoli mash with avocado.
