Last couple of days we eat waffles for breakfast. Every morning my children are asking for waffles. So I was making all kinds of waffles, from sweet keto and low carb waffles with sweet spreads and berries to savory waffles. Today I've made delicious savory keto waffles with cheese and leftovers from yesterday's roasted chicken we had for lunch. If you have some meat leftovers from your Sunday roast or from the soup, this is a great recipe for you! If you don't have any leftovers, ham cut in small pieces will be also delicious.
I have a waffle maker for many years and was using it from time to time. Since I'm a mom I see a real value of a good waffle maker. It's so easy to prepare a healthy breakfast for my children. And desserts too! If you have children or you are struggling with a healthy breakfast ideas for yourself, think about a waffle maker! 🙂 Of course, if you don't have waffle maker and don't want to have one, you can fry this waffle mixture in a frying pan and make it in a form of a pancakes! On top of this delicious savory keto waffles you can put a cream cheese, greek yogurt, veggies that you like, or you can use this delicious keto waffles instead of keto bread to make a sandwich. I was eating this savory keto waffles and drinking yogurt or kefir and it was a perfect keto breakfast combination for me!
Ingredients to get 6 savory keto waffles with cheese and chicken
½ cup almond flour
1 TBS psillyum husk
4 eggs
½ cup heavy whipping cream
Pinch of salt
1 teaspoon baking powder
1 cup shredded cheese like Monterey Jack or gouda
1 cup of chicken leftovers and ham cut into small pieces
Pepper and herbs of your choice.
Procedure to make savory keto waffles with cheese and chicken
Mix almond flour, psyllium husks, baking powder, salt, eggs and heavy whipping cream until is nice and smooth, like this ⬇️
I recommend you to mix it with a hand blender, that works best for me.
Add shredded cheese and ham and meat to the mixture and whisk with a fork.
Let the mixture to sit for 5 minutes.
Bake waffles in a waffle maker of in a frying pan.
If using a frying pan, fry it on a butter or ghee.
Enjoy waffles with a cup of yogurt.
You can put some cream cheese or butter on top, it will be delicious!
