I like this no bake lemon energy balls! It's fantastic summer keto dessert when you need something sweet and you don't want to turn on the oven or a stove. This is totally no bake keto dessert but it's no cooking also! Literally, you just need to mix all ingredients together with a spoon and form the balls with your hands.
Lemon 🍋 is so refreshing and it's great in a combination with coconut and cream cheese. It reminds on a nice lemon keto cheesecake, reminds on summer, and tons other fantastic experiences! It's sweet with lemony taste and flavor, and there is no way for me to explain how good it is, you will have to invest your precious 10 minutes to make it. But believe me, return on this investment will be huuuge! 🙂

Ingredients
Blanched almond meal or almond flour (blanched meal is better) 1 cup/100 g/3.53 oz
Finely shredded unsweetened coconut 1 cup/ 70 g/2.47 oz
Zest of 1 lemon or 3 drops of pure lemon essential oil
Lemon juice 1.5 TBS
Cream cheese 5 TBS/100 g/3.53 oz
Vanilla extract 1 tsp
Pinch of salt
Sweetener (powdered swerve or Sukrin melis or erythritol + few drops of liquid stevia) ⅓ - ½ cup
How to make it lemon energy balls?
Combine together 1 cup of blanched almond meal or almond flour with 1 cup of shredded coconut, pinch of salt and sweetener with a spoon or with spatula. I like to use better fine blanched almond meal.
Add lemon juice and lemon zest of organic lemon, vanilla essence and cream cheese. If you don't have organic lemon, I recommend you not to use the lemon zest. Instead you can use pure edible lemon essential oil 2-3 drops and lemon juice. This is what I recommend you to use, it's pure, edible and high quality oil. If you have any questions about those oils, feel free to contact me via email, IG or Facebook. Another lemon oil that is also quite good is from Pranarom, aslo edible. I like to have lemon, orange, and other edible essential oils to cook with instead of using the whole fruits. It's very convenient, always on hand and organic!
Combine all together with spatula and make small balls with a spoon and with your hands.
Coat energy balls in shredded coconut and put them into fridge for 10-15 minutes.
After 15 minutes you can already eat!
