If I ask my children what they want to eat, they almost always say - pizza! This morning I struggled with keto breakfast ideas, asked children what they want and the answer was - pizza! So, I decided to make some nice keto pizza omelette in the pan.
This is so easy pizza omelette recipe, you can make it in 15 minutes and it's always delicious. Especially if you are bored with eggs and bacon for breakfast but wouldn't mind to eat them in the pizza form. 😂
Keto toppings for pizza omelette
Today, We had omelette pizza and it was fantastic and low carb. For more pizza taste you can add some homemade keto tomato sauce on top. I have delicious and easy recipe here! For more Mediterranean or Italian mood, add fresh mozzarella, fresh basil and tomatoes.
If you like arugula, you can put this delicious keto arugula pesto on top and few anchovies. Or you can try with a slice of prosciutto and fresh arugula.
Ingredients
Lard or butter 1 TBS
Bacon or pancetta slices 100g/3.53 oz
4 M eggs
Mozzarella shredded 1 cup/100 g/3.53 oz
Almond flour 2 TBS
Sea salt
Pepper
Toppings
Basil dried or fresh
Cherry tomatoes
Parmigiano or Grana Padano 1 TBS
How to make omelette pizza?
Melt 1 TBS of lard in the pan.
Fry slices of bacon on lard until crispy.
When bacon is golden brown and crispy remove it from the pan and keep the lard on a pan.
Whisk eggs, add salt, pepper, almond flour and shredded mozzarella, mix it with a fork until nicely combined.
Pour the mixture on a hot lard.
Leave it to cook for 7-10 minutes covered on a very low heat.
When it's cooked, add 2 TBS of shredded mozzarella and 1 TBS grated Parmigiano or Grana Padano, cherry tomatoes and crispy bacon. Sprinkle with some dried or fresh basil.
