Creamy spinach is my favorite keto side dish. It's so satisfying to feel that creamy texture and flavor in your mouth. It has smooth and thick texture. When you pair it with fried eggs with runny yolk, oh em geee! So good! Egg yolks and creamy spinach is food from heaven.

When I make this creamy spinach, it disappears in a second. What I like is to prepare a crispy bacon 🥓 stripes for dipping in this low carb creamy spinach. It's fantastic and children love it too! My toddler enjoys this creamed spinach so much, she is always asking for more. Only my kitchen suffers because she is really messy! 😂
Ingredients
Butter 2 TBS
Onion 100 g/3.53 oz
Spinach 400 g/ 14.11 oz
Heavy whipping cream 1 cup/250 ml
Parmigiano ½ cup/50 g/1.76 oz
Salt to taste
Pepper to taste
Pinch of nutmeg
How to make keto creamed spinach?
Melt 2 TBS of butter in a large pot and put chopped onion on hot butter.
Stir onions until you make it soft and golden brown.
Add washed spinach. If spinach has bigger leaves you can cut it on smaller pieces.
Stir spinach until softened.
When spinach is soft, add heavy whipping cream, salt, pepper and a pinch of nut meg.
Leave it to cook for 5 minutes, mix it with immersion blender, stir and cook for 2-3 minutes more.
Remove it from the heat and add parmigiano. Stir well until Parmigiano cheese completely melted and you get smooth and creamy dish.
Serve with fried eggs and bacon, keto Wiener schnitzel or with any meat cut you like.

I was inspired with this delicious looking recipe to make my keto version. Only in the original version goes flour, milk and other ingredients we don't eat on keto. But that's not the reason for not to enjoy delicious creamy spinach! I really like this dish and I prepare it very often. I can't believe that I haven't publish this recipe before!
