Pork chops or pork cutlets are great meat parts, especially when cooked in rich and tasty mushroom sauce.
I like boneless pork chops, you can make so many different recipes from the same meat part. Easy pork chops recipes became my specialty, and that is totally expected since I am working mom and don't have so much time for cooking. I like to cook pork chops on the stove, on lard or ghee and make some delicious sauce.
How do you tenderize pork chops?
Very often I get the question about tenderizing pork chops. This is not unusual question since pork chops tend to be chewy and dry. However, if you put them on a hot lard or a ghee just for 2 minutes on both sides and then, those pan fried pork chops cook in a gravy for 15-20 minutes, you will get nice and tender pork chops. It will be easy keto meal for the whole family.

Ingredients for keto pork chops in keto mushroom sauce
Lard or ghee 1 TBS
Butter 2 TBS
Pork chops 4 - 6 pieces (400 g)
Mushroms 400 g
Onion 1 medium (100 g)
Beef broth ½ cup (125 ml)
Heavy whipping cream ½ cup (125 ml)
Salt to taste
Pepper
Red paprika spice
1 sun dried tomato cut into small pieces
Basil 🌿 pinch
Oregano pinch
How to cook pork chops on the stove?
Melt the lard or ghee in a large pan.
Season pork chops with salt, pepper and red paprika and put them on a hot lard or ghee for 2-3 minutes on each side.
When chops start to change color to golden brown, place them on a plate.
Instead of cutlets put the cut onion on a lard and add 2 TBS butter.
When onion golden brown add mushrooms and pinch of salt and sauté mushrooms with onion.
Put the chops/cutlets back to the pan when mushrooms sautéed, add remaining seasoning, sun dried tomatoes, herbs and broth and cover it and leave to cook covered for 15 minutes.
After 15 minutes add heavy whipping cream and cook on a low heat uncovered until mushroom sauce is ticked.
