Ingredients for keto Vietnamese chicken recipe
For this recipe, you will need chicken thighs or chicken drumsticks with skin. It is possible to make it with skinless meat, but I don't recommend it because the sauce is sticky, and the meat can stick to the bottom of the pan. If you decide to make it with skinless meat anyway, cook it shorter.
The Vietnamese-style flavor is easy to get with a small amount of rice vinegar and fish sauce, combined with coconut milk. Don't be afraid of fish sauce. I can imagine that it can be a very sharp smell and you want to avoid it if you are sensitive. But that is just temporary. When cooked you won't sense any bad smell, it will be so well combined and delicious!
Coconut milk is also important for this recipe. I always use and recommend full-fat coconut milk, some people call it coconut cream. It's canned, so look for full-fat coconut cans! 🙂
You will also need 2 or 3 garlic cloves, one little onion, and some pepper. You don't need any salt because fish sauce is salty!
HOW TO MAKE KETO VIETNAMESE COCONUT CARAMEL CHICKEN
Place erythritol and water in a pan or a skillet over medium heat. Stir, and when it bubbles and erythritol is melted and starts reducing add the rest of the ingredients except chicken.
Stir to combine everything and add chicken with the skin down, cover it, and leave it to simmer on medium heat for 20 minutes.
Uncover it, turn the chicken on another side and cook for 2o minutes more. Last 20 minutes check it often because you want it to become dark brown and caramelized, but not burned. When the caramel separates from the fat it is done.
Serve chicken with cauliflower rice and scoop some extra sauce.
Garnish with cilantro and chili if you like it and enjoy! 🙂

- Water 1 TBS
- Canned full-fat coconut milk ½ can/200 ml
- Water ½ cup/110 ml
- Fish sauce 1.5 TBS
- Rice vinegar 2.5 TBS
- 2 minced garlic cloves
- 1 small onion finely chopped 27 g/0.95 oz
- Pepper ¼ tsp
- GARNISH
- Cilantro leaves
- Chili flakes or fresh chili
Instructions
