How to feed your children with healthy foods, eggs and veggies if they want to eat only sweets? Well, I might have a solution! My children love these waffles with zucchini or courgette.
This keto waffles recipe is so easy to prepare and you don't actually taste zucchini. You just taste fluffy waffles.
It depends on your waffle iron also, but these keto waffles are crispy outside and moist and fluffy inside. They go perfectly with whipped heavy cream, cream cheese, berries or with keto jams and spreads.

Few months ago, whole keto community went crazy for keto waffles with cheese, but you need to give a chance to these keto waffles with zucchini too. You will be pleasantly surprised.
Zucchini are healthy, low carb and rich in fiber. So, you can eat waffles, stay keto and still get your dose of fiber. How great is that!?
How to make keto waffles with zucchini?
Zucchini or courgette - use freshly grated zucchini. You can drain them if they really have a lot of water in them but you don't have to. I just put them into the mixture with liquid that was in them.
Psyllium husk - I used powdered psyllium. After preparing low carb waffles mixture you need to leave it to rest for 5 minutes. Psyllium will absorb some water and mixture becomes a little bit thicker.
Heavy whipping cream - I use full fat heavy whipping cream in my recipes. Here you can use full fat canned coconut milk if you want to avoid diary products and you can easily make diary free keto waffles.
Sweet or savory low carb waffles
This recipe for keto waffles is great because you can make them savory or sweet. If you want savory keto waffles, just put a pinch of salt. For sweet keto waffles you can add into your mixture few drops of stevia, some erythritol, vanilla extract or cinnamon. Vanilla and cinnamon are sweet spices so you get that sweet experience, even without any sweetener.
Serving low carb waffles
If you decide to make these low carb waffles as savory, serve them with some cream cheese or cottage cheese, or with some good quality butter. They are also great replacement for the sandwich bun or instead of a regular wrap. So you can wrap salami, cheese, salad... Any topping that you like.
For sweet version you can use any of keto spreads and keto jams, cinnamon mixed with erythritol, berries, whipped heavy cream, cottage cheese with some low carb sweetener or whatever keto topping for waffles you like.

Ingredients
- Grated zucchini/courgette 1.5 cup/240 g/8.5 oz
- Heavy whipping cream ¾ cup/170 ml
- Psyllium husk powder 1 TBS
- Almond flour ¾ cup/105 g/3.7 oz
- 4 eggs
- Pinch of salt
- Baking powder 1 tsp
- For sweet waffles
- Vanilla extract 1 tsp
- Cinnamon powder 1 tsp
- Erythritol 1 TBS (optional)
- Coconut oil or butter for baking
Instructions
- Mix all ingredients together and let sit for 5 minutes.
- Spray waffle maker with coconut oil or butter and bake waffles.
- Serve with keto jams, berries, cream cheese or one of keto toppings recommended in the blog post.
- Enjoy!
