When I am tired, there is nothing better for me than a good keto soup. In my family we eat soups every day, especially my kids like my keto soups. This low carb soup is also a vegetarian and vegan friendly and a perfect meal for your keto meatless Monday if you are not a vegetarian or vegan.
Swiss Chard Recipe
Cauliflower is probably the most important vegetable in low carb and keto recipes but Swiss Chard is somehow ignored. I like Swiss Chard and I am eating it regularly, it's really popular here in Mediterranean cooking and we are growing our own in our garden. It's low carb vegetable, packed with Vitamin A, C and Magnesium.
Low carb vegetables for soup and other ingredients you will need
Olive oil or coconut oil 1 TBS
Onion 50 g/1.77 oz
Carrot 30 g/1 oz
Cauliflower 400 g/ 10 oz
Swiss chard 400 g/10 oz
Vegetable broth for vegetarian or vegan keto vegetable soup 1 pint/500 ml
Sugar free tomato sauce 100 ml (0.5 cups)
Parsley finely chopped
Salt to taste (be careful if broth is salty)
Pepper to taste
Red paprika 1 tsp
Turmeric 1 tap
How to make low carb vegetable soup with Swiss Chard?
Heat 1 TBS of olive oil or coconut oil until hot.
Add chopped onion and chopped carrot and stir until onion becomes golden brown. If you want this low carb soup even lower in carbs, you can omit the carrot, but I like it and I use it in my recipes.
When onion is golden brown add chopped cauliflower and vegetable broth (vegetable stock) and water together with salt, spices and herbs. If you don't like veggie version, you can put beef broth.
Cook the soup until it starts to boil, then add chopped Swiss Chard and tomato sauce, stir and cook 10 - 15 minutes covered. You can cook longer if you like, I prefer when vegetables is not completely soft and "killed".

Very good soup! I had to sub ground mustard for the turmeric and chicken broth for the veggie broth because I didn't have them on hand, but otherwise followed recipe. I love Swiss chard. Thanks! Almost forgot, I added some chopped garlic near the end of cooking the carrot/onions, but I add garlic to almost everything.
