Simple keto chicken salad is a healthy, high-protein, and gluten-free recipe. Flavorful and spicy harissa chicken bites with crunchy lettuce and a delicious low-carb salad dressing.
Ingredients
- Romaine lettuce (or your choice), washed and cut or torn into bite-sized pieces 280 g/10 oz
- Chicken breast, cut into bite-size cubes 750 g/26 oz
- Parmesan cheese, grated or shaved ¼ cup/25 g
- For the chicken
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon turmeric
- ½ teaspoon paprika
- ½ teaspoon harissa powder
- ¼ teaspoon pepper
- Dressing
- 1 tablespoon mayonnaise
- 1 tablespoon olive oil
- 1 tablespoon Balsamic vinegar (Aceto balsamico)
- Pinch of salt and pepper
- Topping
- Fried onion (optional)
- More parmesan cheese
- More olive oil
Instructions
Put torn or cut lettuce in a bowl.
Prepare the dressing (whisk together mayonnaise, balsamic vinegar, olive oil, salt and pepper).
Prepare the chicken
Put the chicken cut in bite-size cubes on a pan with a hot olive oil
Season with the salt, pepper and the rest of the spices.
Cook until cooked and lightly browned on the edges.
Assebmble salad
On top of the lettuce put parmesan, and chicken.
Drizzle the dressing over the salad and gently toss to coat the ingredients evenly.
Add topings if you like (optional).
Serve & enjoy!
