Step-by-step procedure for keto blondies
1. Mixing the Blondie Batter
- Preheat your convection oven to 180°C (350°F).
- In a large bowl, combine the almond meal, coconut flour, allulose, baking powder, and salt.
- Add the melted butter to the dry mixture and stir, add eggs, and stir until well combined.
- Fold in the chopped dark chocolate and pecans.
- Pour the batter into a greased baking pan or one lined with parchment paper.
2. Baking the Blondies
- Bake in the preheated oven for 20 to 30 minutes. The center should be slightly jiggly; it will set as it cools.
- Once baked, let the blondies cool in the pan for 10 minutes while you prepare the topping.
Making the pecan pie topping
1. Preparing the Keto Caramel Sauce
- In a saucepan, melt the butter and allulose (or erythritol) over medium heat until it reaches a caramel-like color.
- Remove the pan from heat and carefully whisk in the heavy whipping cream.
- Allow the mixture to cool slightly, then add the egg (ensuring the mixture is below 70°C to avoid scrambling). Whisk thoroughly.
2. Final assembly and baking
- Poke holes in the cooled blondies.
- Sprinkle the chopped dark chocolate and pecans over the top.
- Pour the caramel mixture evenly over the blondies.
- Bake in the oven for 15 minutes at 180°C (350°F).
- Let the bars cool completely before serving for best results, although they can be enjoyed warm (they might be crumbly but super delicious).

Relatively easy recipe to make, and the labor time is accurate. Good flavor but I will add more chocolate into the batter next time. The bottom of my pan (I used a 9 x 13 Pyrex) almost burned at 25 minutes. So next time a will put a baking sheet on the rack below.
It’s so hard with keto; but I wish the texture was more brownie-like. I may experiment with this very good recipe by incorporating some cream cheese in the batter, much the way you blend cold butter into traditional flour.
