HOW TO MAKE KETO VEGAN FRIED CHICKEN?
Oyster mushrooms
Obviously we use oyster mushrooms to prepare this dish. There is no chicken here!
To prepare crispy fried oyster mushrooms, clean the mushrooms and prepare 2 bowls with liquid and dry ingredients.
Liquid ingredients
In one bowl is nut milk (I was using almond milk and you can use another nut milk if you like), combined with lemon juice.
First, you will need to dip the mushrooms into liquid and after that in dry ingredients.
Dry ingredients
For the second bowl you need defatted almond flour, ground paprika, powdered garlic, baking powder, salt and pepper. It is very important to use defatted almond flour and not ground almonds or regular almond flour because it won't be able to keep up together during the frying. Defatted almond flour is behaving like a regular wheat flour and it's perfect for frying like this.
Frying oyster mushrooms keto vegan style
After you dipped the mushrooms in liquid and in dry coating, fry them in deep hot oil until golden brown.
Set them aside on a paper towel, sprinkle with some salt and serve.
HOW TO SERVE VEGAN KETO FRIED OYSTER MUSHROOMS?
You can serve keto fried mushrooms with any low carb vegan dip, like vegan mayo, tomato sauce, salsa, with mashed cauliflower or with guacamole. Whatever you pair with them, will be yummy! Also, salads are wonderful side dish to mushrooms.

Keto vegan fried chicken
Keto vegan fried chicken are actually crispy, flavorful vegan keto fried oyster mushrooms. This is gluten free and low carb family friendly vegan dish. Perfect as a vegan keto main course or a delicious snack.
Ingredients
- Oyster mushrooms 220 g/7.76 oz
- Coconut oil for frying
- WET INGREDIENTS
- Almond milk ⅔ cup
- Lemon juice ¼ cup
- DRY INGREDIENTS
- Defatted almond flour ½ cup/45 g/1.59 oz
- Baking powder 1 tsp
- Ground paprika 1 tsp
- Garlic powder ½ tsp
- Salt ¼ tsp
- Pepper to taste
Instructions
- Clean the mushrooms.
- Prepare 2 bowls, 1 for wet and another for dry ingredients.
- Combine wet ingredients in a bowl and put the mushrooms into the wet mixture.
- Combine all dry ingredients in another bowl and coat mushrooms with dry mixture.
- Heat the oil in a deep frying pan until hot for frying. Oil should cover the mushrooms when frying.
- When oil is hot, fry mushrooms until golden brown (2 - 4 minutes).
- When fried, set them on a paper towel to remove excess oil.
- Sprinkle with salt to taste.
- Enjoy!
