Yeast keto sandwich bread is something I was preparing myself to make for so long time. When finally decided, I tried some recipes I saw on Instagram but I was not satisfied. I wanted low-carb bread that's not eggy, without a funny smell, and not too moist or dry.
Wonderful smelling keto bread
I tried to make this bread several times last weekend until I totally nailed it! Adding ingredients, testing and tasting, it was a really long process but I didn't give up. I had a feeling that I have to make it! And today I made it again to be completely sure that this bread is the best yeast keto bread you can try! Crumb is perfect, it's just right, not crumbly and not eggy.
My whole house have wonderful smell of this yeast keto bread. Yeast is giving that excellent smell to this bread and it helps to raise more. That's why this is great keto sandwich bread. It gives you nice bread slices you can use for keto sandwiches.
One more fantastic fact about this low carb bread is definitely crispy crust. It's just properly crispy, like a real bread. From all keto bread recipes using yeast, this one has the best crust.
I have never tried any keto sourdough bread recipe, but I think this one reminds on some mild sourdough bread.
TIPS TO MAKE THE BEST YEAST KETO SANDWICH BREAD
Almond flour - I was using combination of almond flour and flaxseed flour. I tried with super fine almond flour and with coarser and both work wonderfully. Superfine is maybe a little bit finer and gives slightly better structure. If you don't have it, coarse almond flour will be also very good.
Flaxseed flour - definitely use it and don't skip it because that's a game changer. Use superfine flaxseed flour for this keto bread dough and to sprinkle on top. Flaxseed flour is giving that special smell and in combination with yeast makes this bread taste like a real bread. When you sprinkle the bread with flaxseed flour on top before baking it will help you to get that excellent smelling crispy crust.
Room temperature eggs - always use room temperature eggs, and not from the fridge. This is important for the bread to raise more. Too cold eggs won't let your low carb yeast bread to raise properly.
Grated cheese - I love to add grated cheese to my yeast keto bread dough. Cheese gives something that is missing in usual keto breads made with almond flour and other low carb flours. These flours are gluten free and gluten is the "glue" of the bread. That's why in gluten free bread is great to add some cheese if you can tolerate diary. It makes the difference in structure and taste is amazing!
Instant dry yeast - use dry instant yeast because it will save you a lot of time. You don't have to wait until the dough raise, you don't need to activate the yeast. Just mix all ingredients and bake.
Serving keto yeast bread
Definitely you can make a great keto sandwiches with this bread. You can cut it properly, it's not crumbly and structure is just right for rich keto sandwich. Put some mayo, ham, cheese and you have delicious low carb sandwich or keto lunch to go.
Food prepping is so easy with few slices of this low carb yeast bread. Just take few slices with cream cheese, pickles and salami and voila! You prepared delicious keto breakfast or lunch for another day or to bring with you to have a low carb meal on the go.
In our house we love to put a thick layer of grass fed butter and keto jam on top. I have a selection of keto jam recipes on my blog, so you might choose from keto blueberry jam, homemade sugar free apricot jam or keto strawberry jam.
I love homemade liver pate and lard spread on top. Lard on a slice of brad is my favorite childhood food and we used to eat lard on brad very often for breakfast or as a snack. A thick layer of lard seasoned with salt and pepper! OMG, so good!

Yeast keto sandwich bread
You need this yeast keto sandwich bread in your life! It has wonderful structure, smell and taste of a real bread. It’s not eggy and gives proper slices for your low carb sandwiches.
Ingredients
- 4 M eggs
- Butter 5 TBS/70 g/2.5 oz
- Almond flour ½ cup/8 TBS/70 g/2.5 oz
- Flaxseed flour 3 TBS/25 g/0.8 oz
- Salt ¼ tsp
- Dry instant yeast 1 TBS
- Baking powder ½ tsp
- Warm water 4 TBS
- Shredded cheese (mozzarella or cheddar) 1 cup/100 g/3.5 oz
Instructions
- Preheat the oven to 180 C/ 355 F.
- Melt the butter and set aside.
- Whisk the eggs.
- Combine almond flour, flaxseed flour, yeast, baking powder and salt and combine with eggs.
- Add water warm to touch and melted butter and whisk all together until nicely combined.
- When mixture nicely combined, add shredded cheese and fold it until evenly distributed in the mixture.
- Pour the mixture into a loaf pan layered with a parchment paper.
- Make bread surface smooth with your wet hands and evenly sprinkle one pinch of flaxseed flour on top of the bread dough.
- Bake on 180 C/355 F for 40 minutes or until baked.
- Leave the bread to rest for at least 15 minutes before slicing.
- Enjoy!

I had a very runny dough, so maybe there is a typo in the recipe and shlud be 1 1/2 cup of almond flour? Anyway I used 11/2 cup almond flour to get a normal dough.

Hi there, followed recipe to the letter and ended up with a very runny cake batter 😕 tried adding the ratio of almond flour and flaxseed in tablespoons as mentioned above - ended up with another half cup of almond flour and still ended up with a very wet and sticky "dough"! Not even sure I'd call it a dough! Also when you say whisk the eggs do you just a quick whisk or beat until a fluffy consistency?In the oven so will see how it turns out....

Hi Michelle, it's always the best to take ingredients in grams or oz because almond flour is really depending on band. However, I think you will get nice loaf because in this recipe you don't actually get the dough it's normal that it's runny. When it's baked you get a real bread loaf. It's enough to whisk the eggs, not required some special and long whisking. I hope it will turns out great! Let me know how was it.

I don’t have instant yeast, only regular active dry yeast. Is there a conversion amount and also a time adjuster for how long the yeast mixture should sit?

I love this bread! Not eggy as promised, I did get a very runny batter, so I added more almond flour (3Tbs)as suggested above and 2tbs flaxseed flour, it was a wet dough but it still worked out! Perfect crust and good bread texture...so far the best bread recipe I have tried!

Is the “dough” suppose to runny? How much is it suppose to rise” I don’t have the rustic crust like your pic.. and I didn’t have the yeast smell..

Hi Kathy, no it shouldn't be runny, it should be like a play dough 🙂 I am not sure why you don't smell the yeast. I tried this recipe with almond meal and with super fine almond flour and it worked great but it is possible that you have different almond meal so maybe you should put few TBS's more.
